Black Earth Bourbon
New limited release October 2018. Wisconsin only. Black Earth High-Rye Bourbon is named for the Black Earth Creek Watershed in South Central Wisconsin, one of the most pristine creek environments in the United States. Within the watershed, we are encouraging farmers to use rye as a third rotation crop to promote soil conservation and ecosystem health. Aged just more than two years in new charred white oak barrels, its mash bill is 70 percent corn, 25 percent rye, and 5 percent malt. Black Earth has a gorgeous medium amber appearance and softly grips the glass. Aromas of toasted rye bread and graham cracker move to salted caramel, vanilla, and cherry blossom. The taste is light pepper spice and heat that leads to hints of marmalade, light caramel, and thoughts of fresh sweet corn. It has a complex full flavor finish with a nimble balance of sweetness and lingering toffee, oak, and black pepper spice.
